Index. décimale : 579.38 Résumé : This Master's thesis presents an in-depth study of the inhibitory effect of clove (Syzygium aromaticum) on oral cavity bacteria, in the context of applied microbiology. The main aim of this research is to evaluate the ability of cloves to inhibit the growth of various pathogenic bacteria present in the oral cavity, in particular Streptococcus mutans and Porphyromonas gingivalis, which are responsible for various oral pathologies. The work begins with an introduction to the importance of oral health and infections caused by bacteria. By presenting the bactericidal properties of cloves, the thesis justifies the study as a natural alternative to antibiotics, taking into account the growing problems associated with bacterial resistance. The methodology includes the preparation of extracts, identification of bacterial strains and assessment of the antibacterial activity of the extracts. The thesis concludes on the potential benefits of clove for oral health and paves the way for future research. Index. décimale : 579.36 Résumé : In this study, we evaluated the antimicrobial activity of four Algerian honey samples (eucalyptus+ jujube, euphorbia, heather, and rush broom) against three pathogenic bacterial strains (staphylococcus aureus, Eschrichia coli, pseudomonas aeruginosa) and three phytopathogenic fungal strains (Aspergillus niger, Aspergillus flavus, penicillium expansum)
The results showed that antimicrobial activity varied depending on the type of honey, its concentration, and the microbial strain tested, pure honey was the most effective, particularly against S. aureus, with inhibition zones up to 22 mm.A dose-dependent effect was observed, with a significant reduction in activity at 50% concentration. statistical analysis (ANOVA) revealed highly significant differences (p < 0.001). These findings highlight the therapeutic potential of natural honey as an alternative or complementary antimicrobial agent
